The family recipes, often more than 100 years old, are the culinary heritage of the pioneers and natives of Kanda. Sparkling water - Ontario - is what the Iroquois called the endless land in the middle of Canada, crossed by many lakes. A province so large that the polar bear is at home in the north and wine and peanuts are grown in the south. Its residents are conscious of tradition and proud of the historical past of their home country, and they place great value on good, healthy and natural cuisine.
The author, also an avid nature and wildlife photographer, spent much of 2007 in Ontario. The recipes she has collected are largely based on oral traditions according to which meals were prepared by Indians, trappers, lumberjacks, traders and farmers in ancient times. Enriched by the influence of more immigrants and more modern cooking facilities, the preparation of dishes has changed a little and, above all, they are no longer as high in calories as in pioneer times.
Whether as a host at private dinner or BBQ parties with friends and relatives, at cooking competitions or as a restaurant owner - you are proud of the cooking recipes you have inherited. Social gatherings or just entertaining a guest who happens to drop in are still very important today in this infinitely large country. Instead of being prepared in a conventional kitchen, many dishes can also be prepared on or in various types of grills, in a Dutch oven or sometimes over a campfire.
